Herb-Crusted Pork Tenderloin with Dijon Mustard

SPICY PROTEIN

SERVES 4

2 pounds pork tenderloin, fat trimmed

1 tablespoon Dijon mustard

1 package low-sodium onion soup mix

2 teaspoons chopped fresh rosemary leaves

2 garlic cloves, minced

1 teaspoon chopped fresh marjoram leaves

Rich protein is the core of this dish. The spicy mustard contains phytonutrients and the antioxidant selenium and will instantly boost your metabolism.

1. Preheat oven to 375°F. Rub top of tenderloin with Dijon mustard. Then, coat both sides with the soup mix. Place on aluminum foil, mustard side up. Top with rosemary, garlic, and marjoram. Cover with foil and place on baking sheet or in baking dish.

2. Bake for about 40 minutes or until pork is cooked through but slightly pink. Remove from oven, let rest 10 minutes, then slice and serve.
